BEET AND WALNUT TAPENADE
This is a quick, easy recipe that makes a wonderful appetizer. Serve with warm bread or crackers. Gluten free? Pick up some of our delicious gluten free crackers from our selection. Serve with some lovely cheeses, olives, pates & charcuterie and a good bottle of wine for easy entertaining. Everything for this recipe is available at Rattos, with the exception of the beets. Here’s the recipe:
Pulse a cup of walnuts in a food processor until coarsely chopped.
Add a cup of peeled, cooked beets and pulse until a rough paste forms.
Add 1/2 cup of Rattos extra virgin olive oil, 1/4 cup of of water, and2 TBS. of tahini.
Pulse a few times until combined. Add some lemon juice, salt and pepper to taste.
Beets are available in various colors at the Old Oakland Farmers Market every Friday right outside our door.
